You may want to check with Washington State University - Vancouver (the main campus in Pullman may also have similar materials). They offer several social justice type courses toward a certificate. The Pullman campus has had a strong Environmental Sociology program.

Subject: [RSCT] Environmental Justice Syllabi?
Hello, friends.
I'm wondering if anybody has, or knows where I can find, examples of
syllabi for undergraduate courses in Environmental Justice..? I'm
helping to design such a course for a new program at George Mason
University.
Also, if you have any ideas of good readings or films to incorporate
into such a course, I'd love to hear your ideas!
Thanks,
Paul
